I'm so happy to finally share these photographs from our Sunday brunch with Amanda, Justin and her family. What I love most about Amanda is her ability to cook and bake practically anything. Every time I visit Amanda and Justin's apartment, she has something cooking. The meal prepared for the brunch was especially delicious because it was Amanda's birthday. That's right, the birthday girl cooked brunch for all of us, and I'm so thankful she did because once again she did not disappoint.
On the menu this Sunday morning was a baked french toast casserole. Amanda used bread made with raisins and pecans. The bread was soaked in a custard overnight then topped with praline in the morning. It was delicious (I think Andre had three servings). Along with the french toast, Amanda made chive risotto cakes made with arborio rice, chives, greek yogurt, and organic eggs. She let the risotto sit overnight then created little patties in the morning. The patties were then covered with panko bread crumbs before being seared in extra virgin olive oil. A perfect combination of food, it was.
Thank you for the wonderful food and company. I wish we could celebrate birthdays every weekend.
